A straightforward recipe for a whole roasted chicken featuring garlic, herbs, and butter to achieve moist meat and crisp skin.

Ingredients

Scale
  • 1 whole chicken (about 4 lbs)
  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, halved
  • 1 small onion, quartered
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 425°F (220°C). Remove the giblets from the chicken cavity and pat the chicken completely dry, inside and out, with paper towels.
  2. In a small bowl, combine the softened butter, minced garlic, rosemary, thyme, paprika, salt, and pepper. Mix until you form a smooth herb butter.
  3. Gently loosen the skin over the chicken breasts and thighs. Rub half of the herb butter mixture directly onto the meat under the skin. Rub the remaining butter mixture all over the outside of the chicken skin.
  4. Place the lemon halves and onion quarters inside the chicken cavity. Tie the legs together with kitchen twine, if desired.
  5. Place the chicken in a roasting pan or a large oven-safe skillet. Drizzle the skin with olive oil.
  6. Roast for 15 minutes at 425°F (220°C). Then, reduce the oven temperature to 375°F (190°C) and continue roasting for 50 to 70 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C).
  7. If the skin browns too quickly, loosely tent the chicken with aluminum foil.
  8. Remove the chicken from the oven. Let it rest on a cutting board for 10 to 15 minutes before carving.

Notes

  • For extra crispy skin, place the chicken on a wire rack set inside the roasting pan.
  • If you want to roast vegetables like carrots or potatoes, add them to the pan during the last 45 minutes of cooking time.
  • Use fresh herbs for the best flavor profile. Dried herbs can be substituted at half the amount listed.
