Make these simple, layered bars featuring a chewy oat base, a creamy peanut butter filling, and a rich chocolate topping. No oven is required.

Ingredients

Scale
  • 1 1/2 cups rolled oats
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup creamy peanut butter (for the middle layer)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium bowl, combine the rolled oats, graham cracker crumbs, melted butter, granulated sugar, 1/2 cup peanut butter, and vanilla extract. Mix until the mixture is evenly moistened.
  3. Press this oat mixture firmly and evenly into the bottom of the prepared pan. Place the pan in the freezer while you prepare the next layers.
  4. In a small, microwave-safe bowl, combine the chocolate chips and the remaining 1/4 cup of peanut butter. Microwave in 30-second intervals, stirring between each, until smooth and fully melted.
  5. Pour the chocolate mixture over the chilled oat base. Spread it evenly across the top.
  6. Return the pan to the refrigerator and chill for at least 2 hours, or until the chocolate topping is firm.
  7. Use the parchment paper overhang to lift the bars from the pan. Cut into 16 squares before serving.

Notes

  • For a firmer bar, chill the bars overnight before cutting.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
  • You can substitute almond butter for peanut butter if desired.
