Make a smooth, creamy, low-carb substitute for mashed potatoes using cauliflower and roasted garlic.

Ingredients

Scale
  • 1 large head cauliflower (about 2 lbs)
  • 4 cloves garlic
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter or ghee
  • 1/4 cup heavy cream or full-fat coconut milk
  • 2 tablespoons cream cheese or nutritional yeast for dairy-free
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the garlic cloves, toss them with 1 tablespoon of olive oil, and wrap them loosely in aluminum foil. Roast the garlic for 20 to 25 minutes until soft and golden brown. Set aside to cool slightly.
  3. Cut the cauliflower into small, uniform florets.
  4. Place the cauliflower florets in a large pot and cover with water. Add 1/2 teaspoon of salt. Bring to a boil, then reduce heat and simmer for 10 to 15 minutes, or until the cauliflower is very tender when pierced with a fork.
  5. Drain the cauliflower completely in a colander. Let it sit for 5 minutes to allow excess steam and water to escape. This step is key for creaminess.
  6. Transfer the drained cauliflower to a large, dry skillet over medium heat. Cook for 3 to 5 minutes, stirring occasionally, to dry out any remaining moisture.
  7. Add the roasted garlic (squeeze the soft pulp from the skins), butter, heavy cream, cream cheese (or nutritional yeast), salt, and pepper to the skillet with the cauliflower.
  8. Use an immersion blender or a potato masher to blend the mixture until completely smooth and creamy. If using a standard blender, work in batches and be careful with hot liquids.
  9. Taste and adjust salt and pepper as needed. Serve immediately.

Notes

  • To achieve the smoothest texture, use a food processor or high-powered blender instead of a hand masher.
  • For a richer flavor, substitute the butter with browned butter.
  • If the mash seems too thick, add cream one tablespoon at a time until you reach your desired consistency.
