Ingredients
- 2 cans (20 ounces each) young green jackfruit in brine, drained and rinsed
- 1 tablespoon olive oil
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 cup your favorite BBQ sauce
- 2 tablespoons apple cider vinegar
- 1 tablespoon brown sugar
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and black pepper to taste
- 4-6 sandwich buns
- Optional toppings: coleslaw, pickles, sliced red onion
Instructions
- Rinse the drained jackfruit thoroughly. Remove any tough core pieces and shred the jackfruit with two forks or your hands.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the shredded jackfruit to the skillet. Cook, stirring occasionally, for about 5 minutes until it begins to brown slightly.
- Stir in the BBQ sauce, apple cider vinegar, brown sugar, smoked paprika, and chili powder. Mix well to coat the jackfruit evenly.
- Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, stirring occasionally, until the jackfruit is tender and has absorbed the flavors.
- Season with salt and black pepper to your liking.
- Toast the sandwich buns if desired.
- Spoon a generous amount of the BBQ pulled jackfruit onto the bottom half of each bun.
- Add your favorite toppings and top with the other half of the bun. Serve immediately.
Notes
- For a spicier sandwich, add a pinch of cayenne pepper to the jackfruit mixture.
- You can prepare the pulled jackfruit ahead of time and reheat it before serving.
- If you don’t have apple cider vinegar, white vinegar or even a splash of lemon juice can be used.
