Ingredients

Scale
  • 2 cans (20 ounces each) young green jackfruit in brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup your favorite BBQ sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • 4-6 sandwich buns
  • Optional toppings: coleslaw, pickles, sliced red onion

Instructions

  1. Rinse the drained jackfruit thoroughly. Remove any tough core pieces and shred the jackfruit with two forks or your hands.
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Add the shredded jackfruit to the skillet. Cook, stirring occasionally, for about 5 minutes until it begins to brown slightly.
  5. Stir in the BBQ sauce, apple cider vinegar, brown sugar, smoked paprika, and chili powder. Mix well to coat the jackfruit evenly.
  6. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, stirring occasionally, until the jackfruit is tender and has absorbed the flavors.
  7. Season with salt and black pepper to your liking.
  8. Toast the sandwich buns if desired.
  9. Spoon a generous amount of the BBQ pulled jackfruit onto the bottom half of each bun.
  10. Add your favorite toppings and top with the other half of the bun. Serve immediately.

Notes

  • For a spicier sandwich, add a pinch of cayenne pepper to the jackfruit mixture.
  • You can prepare the pulled jackfruit ahead of time and reheat it before serving.
  • If you don’t have apple cider vinegar, white vinegar or even a splash of lemon juice can be used.
