Ingredients

Scale
  • 1 lb ground pork
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 cup cooked jasmine rice
  • 1/2 cup shredded carrots
  • 1/2 cup thinly sliced cucumber
  • 1/4 cup pickled daikon and carrots (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons chopped peanuts
  • 1 tablespoon sriracha
  • 1 tablespoon mayonnaise

Instructions

  1. In a bowl, combine ground pork, soy sauce, fish sauce, brown sugar, garlic powder, onion powder, and black pepper. Mix well.
  2. Heat vegetable oil in a skillet over medium-high heat. Add the pork mixture and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
  3. Assemble your bowls: Divide the cooked jasmine rice among serving bowls.
  4. Top the rice with the cooked pork.
  5. Add shredded carrots, sliced cucumber, and pickled daikon and carrots (if using) to each bowl.
  6. Garnish with fresh cilantro and mint.
  7. Sprinkle with chopped peanuts.
  8. In a small bowl, mix sriracha and mayonnaise. Drizzle over the bowls.

Notes

  • For a vegetarian option, use firm tofu or tempeh seasoned similarly to the pork.
  • You can prepare the pickled daikon and carrots ahead of time for convenience.
  • Adjust sriracha and mayonnaise to your spice preference.
