Make a satisfying, creamy vegan chickpea salad sandwich filling that mimics classic deli salads. This recipe is quick and perfect for healthy lunches.

Ingredients

Scale
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/4 cup vegan mayonnaise
  • 2 tablespoons finely chopped celery
  • 1 tablespoon finely chopped red onion
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 slices whole-grain bread
  • Lettuce leaves for serving

Instructions

  1. Place the rinsed and drained chickpeas in a medium bowl.
  2. Use a fork or potato masher to coarsely mash the chickpeas. Aim for a mix of textures, leaving some whole or partially mashed pieces.
  3. Add the vegan mayonnaise, celery, red onion, lemon juice, Dijon mustard, dill, and garlic powder to the bowl.
  4. Mix all ingredients together until well combined and creamy.
  5. Season the salad generously with salt and black pepper. Taste and adjust seasoning as needed for tanginess or saltiness.
  6. To assemble the sandwich, place a layer of lettuce on one slice of bread.
  7. Spoon a generous amount of the chickpea salad mixture onto the lettuce.
  8. Top with the second slice of bread.
  9. Repeat for the remaining sandwiches.

Notes

  • For a gluten-free option, serve the filling on gluten-free bread or large lettuce cups.
  • If you prefer a smoother texture, pulse the chickpeas briefly in a food processor before mixing in the other ingredients.
  • You can substitute celery with finely chopped pickles or relish for added crunch and tang.
