Make exceptionally light and airy Belgian waffles from scratch. This recipe uses separated eggs to achieve superior fluffiness and a crisp exterior, outperforming any boxed mix.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs, separated (yolks and whites)
  • 1 3/4 cups milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate medium bowl, whisk the egg yolks, milk, melted butter, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are acceptable.
  4. In a clean, dry bowl, beat the egg whites with an electric mixer until stiff peaks form. This step is key for fluffiness.
  5. Gently fold the beaten egg whites into the batter in two additions. Fold just until no white streaks remain. Overmixing will deflate the air.
  6. Preheat your Belgian waffle iron according to the manufacturer’s directions. Lightly grease the plates if necessary.
  7. Pour the batter onto the hot iron, filling it sufficiently to create deep pockets.
  8. Cook according to your waffle iron’s instructions until golden brown and crisp.
  9. Serve immediately.

Notes

  • For the thickest batter, let the finished batter rest for 10 minutes before cooking.
  • Whip the egg whites immediately before folding them in for maximum volume.
  • If you prefer a slightly tangier flavor, substitute 1/4 cup of the milk with buttermilk.
