A simple recipe for making flavorful and firm vegetarian patties using sweet potato and lentils, suitable for baking or pan-frying.

Ingredients

Scale
  • 1 large sweet potato (about 1.5 cups mashed)
  • 1 cup cooked brown or green lentils, drained well
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil, plus more for cooking
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 large egg (omit for vegan, replace with 1 tablespoon flaxseed meal mixed with 3 tablespoons water)

Instructions

  1. Preheat your oven to 400°F (200°C) or prepare a large skillet with a thin layer of oil over medium heat.
  2. Bake or microwave the sweet potato until very soft. Scoop out the flesh and mash it until smooth. You need about 1.5 cups of mashed sweet potato. Let it cool slightly.
  3. In a large bowl, combine the mashed sweet potato, cooked lentils, breadcrumbs, chopped onion, minced garlic, 1 tablespoon olive oil, cumin, smoked paprika, salt, and pepper.
  4. Add the egg (or flax egg substitute) to the mixture. Mix everything thoroughly with a fork or your hands until well combined. The mixture should hold together when squeezed. If it seems too wet, add 1 more tablespoon of breadcrumbs.
  5. Form the mixture into 6 equal-sized patties, about 3/4 inch thick.
  6. For baking: Place patties on a parchment-lined baking sheet. Bake for 15 minutes, flip carefully, and bake for another 10-15 minutes until firm and lightly browned.
  7. For pan-frying: Cook patties in the heated oil for 4-5 minutes per side until golden brown and heated through.

Notes

  • For best binding, ensure your cooked lentils are very dry before mixing them into the batter.
  • These patties freeze well after cooking. Cool completely, then store in an airtight container separated by parchment paper.
  • Serve on buns with avocado slices, lettuce, tomato, and a dollop of plain yogurt or vegan mayonnaise mixed with a little sriracha.
