This sugar-free banana bread delivers incredible moisture and flavor using only the natural sweetness of very ripe bananas. It is a comforting, guilt-free treat perfect for breakfast or a snack, and it works well for those managing their sugar intake.

Ingredients

Scale
  • 3 large, very ripe bananas (the spottier, the better)
  • 2 large eggs
  • 1/4 cup melted unsalted butter or coconut oil
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour (For a low-carb option, substitute with 1 cup almond flour plus 3/4 cup coconut flour, adjusting liquid slightly if needed)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Optional mix-ins: 1/2 cup chopped walnuts or sugar-free chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan, or line it with parchment paper.
  2. In a large bowl, mash the ripe bananas thoroughly until mostly smooth. You want some small lumps for texture.
  3. Whisk the eggs, melted butter (or oil), applesauce, and vanilla extract into the mashed bananas until combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. If using low-carb flours, mix them well here.
  5. Gradually add the dry ingredients to the wet ingredients. Mix only until just combined. Do not overmix; a few streaks of flour are fine.
  6. Fold in any optional mix-ins like nuts or sugar-free chocolate chips.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50 to 65 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached. Baking time varies based on your flour choice.
  9. Let the bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely before slicing.

Notes

  • The ripeness of your bananas is key; they provide all the sweetness needed for this recipe.
  • For a diabetic friendly bread option, use almond flour or a low-carb blend as suggested in the ingredients list.
  • This loaf freezes well. Wrap cooled slices tightly in plastic wrap before placing them in a freezer bag for up to three months.
