Make decadent, creamy stuffed French toast using a simple cream cheese filling and fresh berries. This recipe is perfect for a weekend brunch.

Ingredients

Scale
  • 8 thick slices of brioche or challah bread
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup milk
  • 1/4 teaspoon ground cinnamon
  • 1 cup fresh blueberries or sliced strawberries
  • 2 tablespoons butter, for frying
  • Maple syrup, for serving

Instructions

  1. In a small bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth. This is your filling.
  2. Take four slices of bread. Spread half of the cream cheese mixture evenly over one side of each of these four slices.
  3. Top each cream cheese-covered slice with a second slice of bread, creating four sandwiches. Gently press the edges together.
  4. In a shallow dish, whisk together the egg, milk, and cinnamon.
  5. Dip each sandwich into the egg mixture, coating both sides briefly. Do not soak the bread.
  6. Melt butter in a large skillet over medium heat.
  7. Cook the stuffed sandwiches for 3 to 4 minutes per side, until golden brown and the filling is warm.
  8. If using berries, gently press a few berries into the top of each cooked slice before serving.
  9. Serve immediately with maple syrup.

Notes

  • For a make-ahead option, assemble the sandwiches and refrigerate them covered for up to 4 hours before dipping and cooking.
  • Use thick-cut bread to prevent the filling from squeezing out during cooking.
  • You can bake this recipe as a casserole by assembling the sandwiches in a baking dish and pouring the egg mixture over the top, then baking at 375°F for 25 minutes.
