Ingredients

Scale
  • 4 large bell peppers (any color), halved lengthwise and seeds removed
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • 1.5 cups shredded cheddar cheese (or a blend of your favorite cheeses)
  • Optional toppings: chopped cilantro, sour cream, avocado

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the halved bell peppers cut-side up in a baking dish.
  3. In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until the liquid is absorbed and the quinoa is fluffy.
  4. While the quinoa is cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  5. Add the minced garlic to the skillet and cook for another minute until fragrant.
  6. Stir in the rinsed black beans, corn kernels, chili powder, cumin, salt, and pepper. Cook for 2-3 minutes, stirring occasionally.
  7. Once the quinoa is cooked, add it to the skillet with the bean and corn mixture. Stir to combine.
  8. Spoon the quinoa mixture evenly into the prepared bell pepper halves.
  9. Top each stuffed pepper generously with shredded cheese.
  10. Pour about 1/2 inch of water into the bottom of the baking dish to help steam the peppers.
  11. Cover the baking dish with foil and bake for 30 minutes.
  12. Remove the foil and bake for another 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  13. Let cool slightly before serving. Add your favorite toppings if desired.

Notes

  • For a vegan option, omit the cheese or use a dairy-free shredded cheese alternative.
  • You can add other vegetables like diced zucchini or mushrooms to the filling.
  • If you don’t have vegetable broth, water can be used, but broth adds more flavor to the quinoa.
  • Make sure to rinse the quinoa thoroughly before cooking to remove any bitterness.
