A fresh and light salad featuring spinach, strawberries, and a homemade sweet and tangy poppy seed dressing.

Ingredients

Scale
  • 5 ounces fresh baby spinach
  • 1 pound fresh strawberries, hulled and sliced
  • 1/2 cup sliced almonds, toasted
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 2 tablespoons granulated sugar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon poppy seeds
  • 1/4 teaspoon onion powder
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Prepare the dressing: In a small bowl, whisk together the olive oil, white wine vinegar, sugar, Dijon mustard, poppy seeds, onion powder, salt, and pepper until well combined and the sugar dissolves. Set aside.
  2. Prepare the salad components: Place the baby spinach in a large salad bowl. Arrange the sliced strawberries over the spinach.
  3. Add toppings: Sprinkle the toasted sliced almonds and crumbled feta cheese (if using) over the strawberries and spinach.
  4. Dress the salad: Pour the poppy seed dressing over the salad just before serving. Toss gently to coat all ingredients evenly.
  5. Serve immediately.

Notes

  • For a different crunch, substitute toasted pecans or walnuts for the almonds.
  • If you prefer a sharper flavor, use red wine vinegar instead of white wine vinegar in the dressing.
  • For a heartier meal, add grilled chicken breast or salmon.
  • You can substitute goat cheese for feta cheese.
