Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
Unroll the pie crusts onto a lightly floured surface. Cut each crust into 6 equal squares, yielding 12 squares total.
In a medium bowl, beat the softened cream cheese, granulated sugar, egg yolk, vanilla extract, and salt until the mixture is smooth and creamy. This is your filling.
Place the squares cut-side up on the prepared baking sheets. Using a sharp knife, lightly score a border about 1/2 inch from the edge of each square, being careful not to cut all the way through the dough.
Spoon about 1 tablespoon of the cream cheese filling into the center of each square, staying inside the scored border.
Top the cream cheese filling with about 1 teaspoon of strawberry preserves.
Brush the scored edges of the dough lightly with the beaten egg wash.
Bake for 15 to 18 minutes, or until the pastry is golden brown and puffed.
While the danishes cool slightly, whisk together the powdered sugar and milk or water to create a thin glaze.
Drizzle the glaze over the warm danishes before serving.
Notes
If you prefer a flakier texture, use store-bought puff pastry instead of pie crusts and follow the baking time for the pastry package directions.
For a brighter strawberry flavor, gently warm the preserves before spooning them onto the filling.
You can substitute raspberry or apricot preserves for the strawberry flavor.
