Enjoy a delightful twist on a classic dessert with these Strawberry Cheesecake Chimichangas. Crispy fried tortillas are filled with creamy cheesecake and sweet strawberries, then dusted with cinnamon sugar for a warm, comforting treat.

Ingredients

Scale
  • 8 flour tortillas
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1/4 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • Vegetable oil, for frying

Instructions

  1. In a bowl, beat together the softened cream cheese and 1/2 cup granulated sugar until smooth.
  2. Beat in the egg and vanilla extract until well combined.
  3. Stir in the chopped strawberries.
  4. Lay a tortilla flat. Spoon about 2 tablespoons of the cream cheese mixture onto the center of the tortilla.
  5. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom, like a burrito.
  6. Repeat with the remaining tortillas and filling.
  7. In a shallow dish, mix together the powdered sugar, 1/4 cup granulated sugar, and cinnamon.
  8. Heat about 1 inch of vegetable oil in a skillet over medium-high heat until shimmering.
  9. Carefully place the chimichangas seam-side down into the hot oil. Fry for 2-3 minutes per side, until golden brown and crispy.
  10. Remove the chimichangas from the oil and place them on a paper towel-lined plate to drain.
  11. While still warm, roll the chimichangas in the cinnamon-sugar mixture until evenly coated.
  12. Serve immediately.

Notes

  • For an extra special touch, drizzle with chocolate sauce or caramel before serving.
  • If you don’t have fresh strawberries, you can use thawed frozen strawberries. Make sure to drain them well.
  • You can prepare the cheesecake filling a day in advance and store it in the refrigerator.
