For Toppings: Sliced green onions, corn kernels, nori sheets, cooked pork belly (optional)
Instructions
Prepare the soft-boiled eggs: Bring a small pot of water to a rolling boil. Gently lower the eggs into the boiling water. Cook for exactly 6 minutes and 30 seconds for a jammy yolk. Immediately transfer the eggs to an ice bath to stop the cooking process. Peel carefully when cool.
For extra flavor, place the peeled eggs in a small container with 2 tablespoons soy sauce and 1 tablespoon mirin (if available) for at least 30 minutes while you prepare the broth.
Start the spicy miso base: Heat the neutral oil in a medium saucepan over medium heat. Add the minced garlic and grated ginger. Cook for 1 minute until fragrant.
Add the miso pastes, soy sauce, sesame oil, chili garlic sauce, and Szechuan peppercorns (if using) to the pan. Stir constantly for 1 minute to toast the miso, creating the tare base.
Pour in the chicken or vegetable stock and add the sugar. Bring the mixture to a gentle simmer, stirring until the miso is fully dissolved into the broth. Taste and adjust seasoning if needed. Keep warm.
Cook the noodles according to package directions. Drain well.
Assemble the ramen: Divide the cooked noodles between two large bowls. Pour the hot spicy miso broth over the noodles.
Slice the marinated soft-boiled eggs in half. Arrange the eggs, green onions, corn, and any other desired toppings over the broth. Serve immediately.
Notes
Use red miso for a deeper, saltier flavor, or a mix of red and white miso for balance.
For the best egg marinade, use low-sodium soy sauce to control the salt level.
If you do not have chili garlic sauce, use 1 teaspoon of your favorite chili oil instead.
