Ingredients
Scale
2 large ripe mangoes, diced
1/2 red onion, finely diced
1 habanero pepper, seeded and minced (use gloves)
1/2 cup fresh cilantro, chopped
1/4 cup fresh lime juice (about 2 limes)
1/2 teaspoon salt
1/4 teaspoon ground cumin
Instructions
Prepare the mangoes by peeling and dicing them into small, uniform pieces. Place the diced mango in a medium bowl.
Finely dice the red onion. Wear gloves when handling the habanero pepper; remove the stem, seeds, and white membrane, then mince the pepper finely. Add the onion, habanero, and chopped cilantro to the bowl with the mango.
Pour the fresh lime juice over the mixture.
Sprinkle the salt and ground cumin over the ingredients.
Gently fold all ingredients together until they are evenly combined. Avoid overmixing to keep the mango pieces intact.
Taste the salsa and adjust salt or lime juice as needed.
Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Notes
For a milder heat, substitute the habanero with one jalapeƱo pepper, or use half a habanero.
If you prefer a smoother texture, pulse the ingredients briefly in a food processor, but do not puree.
This salsa keeps well in an airtight container in the refrigerator for up to 3 days.
Serve this salsa with grilled fish, chicken, pork chops, or tortilla chips.
