Make small, soft biscuit bites coated generously in a sweet cinnamon sugar mixture. This recipe yields tender, pull-apart snacks perfect for a quick treat.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 3/4 cup cold milk
  • 1/2 cup granulated sugar for dough
  • 1/2 cup granulated sugar for topping
  • 2 tablespoons ground cinnamon for topping

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Cut the cold butter into the flour mixture using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the 1/2 cup of sugar designated for the dough.
  5. Pour in the cold milk all at once. Mix gently until just combined into a shaggy dough. Do not overmix.
  6. Turn the dough out onto a lightly floured surface. Gently pat the dough into a rectangle about 3/4 inch thick.
  7. Use a small biscuit cutter (about 1.5 inches) to cut out small rounds. Place the rounds close together on the prepared baking sheet.
  8. In a small bowl, mix the 1/2 cup sugar and 2 tablespoons of cinnamon for the topping.
  9. Brush the tops of the biscuit bites lightly with melted butter (optional, for better adhesion).
  10. Generously sprinkle the cinnamon sugar mixture over the tops of all the biscuit bites.
  11. Bake for 12 to 15 minutes, or until the tops are golden brown and the biscuits are puffed.
  12. Let the bites cool slightly before serving warm.

Notes

  • For extra soft bites, you can brush the tops with melted butter again immediately after they come out of the oven before the final sugar coating sets.
  • If you do not have a small cutter, you can cut the dough into small squares.
  • Keep the butter and milk very cold for the best rise and texture.
