Ingredients
Scale
2 pounds boneless, skinless chicken breasts or thighs
1/2 cup honey
1/4 cup soy sauce
2 tablespoons ketchup
1 tablespoon rice vinegar
1 tablespoon olive oil
3 cloves garlic, minced
1 teaspoon grated fresh ginger
1/4 teaspoon black pepper
Cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) – optional, for thickening sauce
Sesame seeds and chopped green onions for garnish – optional
Instructions
Place chicken in the slow cooker.
In a medium bowl, whisk together honey, soy sauce, ketchup, rice vinegar, olive oil, minced garlic, grated ginger, and black pepper.
Pour the sauce over the chicken in the slow cooker.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
Remove chicken from the slow cooker and shred or slice it.
If you prefer a thicker sauce, whisk the cornstarch slurry into the slow cooker liquid and cook on high for another 15-30 minutes, or until thickened.
Return the chicken to the slow cooker and stir to coat with the sauce.
Serve hot, garnished with sesame seeds and green onions if desired.
Notes
Boneless, skinless chicken thighs will stay moister than chicken breasts.
Adjust the amount of honey or soy sauce to your taste.
For a spicier kick, add a pinch of red pepper flakes to the sauce.
Serve over rice or with your favorite vegetables.
