Ingredients
Scale
1.5 lb Italian sausage links (sweet or hot)
3 large bell peppers (red, yellow, green), sliced
1 large yellow onion, thickly sliced
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a large, rimmed baking sheet with parchment paper for easy cleanup.
In a large bowl, combine the sliced bell peppers and onion.
Drizzle the vegetables with olive oil, dried oregano, garlic powder, salt, and pepper. Toss until everything is evenly coated.
Arrange the seasoned vegetables on the prepared baking sheet in a single layer.
Place the whole sausage links among the vegetables on the pan.
Bake for 25 to 30 minutes, flipping the sausages halfway through the cooking time. The vegetables should be tender and slightly caramelized, and the sausage internal temperature should reach 160 degrees Fahrenheit.
Remove from the oven and serve immediately.
Notes
You can use any type of sausage, such as bratwurst or chicken sausage. Adjust cooking time slightly if using pre-cooked sausage.
For extra flavor, add 1/2 teaspoon of red pepper flakes to the vegetable mix.
Serve this dish over cooked rice, quinoa, or inside hoagie rolls for a sandwich.
