- 1.5 lb rainbow carrots, trimmed and halved lengthwise if thick
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
- In a large bowl, toss the prepared carrots with olive oil, honey, dried thyme, salt, and pepper until they are evenly coated.
- Spread the seasoned carrots in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary.
- Roast for 20 to 25 minutes, tossing the carrots halfway through the cooking time, until they are tender and slightly caramelized.
- Remove from the oven and transfer the roasted carrots to a serving dish. Sprinkle with fresh chopped parsley before serving.
Notes
- For a slight tang, add 1 teaspoon of apple cider vinegar to the tossing mixture.
- If your carrots are very thin, reduce the roasting time by about 5 minutes.
- You can substitute maple syrup for honey if preferred.
