Learn the best way to roast sweet potatoes to achieve tender insides and irresistibly crispy edges every time. This simple sweet potato recipe is perfect for weeknight sides or holiday meals.

Ingredients

Scale
  • 3 large sweet potatoes, scrubbed and cut into 1-inch cubes or wedges
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika (optional, for savory flavor)
  • 1 tablespoon honey or maple syrup (optional, for caramelization)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). You need high heat for crispy results.
  2. Place the sweet potato cubes or wedges on a large, rimmed baking sheet. Do not overcrowd the pan; use two sheets if necessary.
  3. Drizzle the sweet potatoes with olive oil.
  4. Sprinkle evenly with salt, pepper, and garlic powder. If you want a slightly sweet and caramelized finish, drizzle the honey or maple syrup over the potatoes now.
  5. Toss everything together directly on the pan until the potatoes are evenly coated. Spread them into a single layer again.
  6. Roast for 20 minutes.
  7. Remove the pan from the oven and carefully flip the sweet potatoes using a spatula.
  8. Return to the oven and roast for another 10 to 15 minutes, or until the edges are deeply browned and crispy, and the centers are tender when pierced with a fork.
  9. Remove from the oven and serve immediately as your perfect sweet potato side dish.

Notes

  • For the crispiest roasted sweet potato cubes, make sure your baking sheet is hot when the potatoes go in. You can place the sheet in the oven while it preheats.
  • Do not skip the single-layer rule; crowding the pan steams the potatoes instead of roasting them.
  • If you prefer a savory side, skip the honey/maple syrup and add 1/2 teaspoon of onion powder with the other spices.
  • These meal prep sweet potatoes reheat well in an air fryer or oven to restore crispness.
