Prepare this simple, flavorful shrimp and rice dish entirely in one skillet. It cooks fast, making it perfect for a speedy weeknight meal with minimal cleanup.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound raw shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large, oven-safe skillet over medium-high heat.
  2. Add the shrimp to the hot skillet and cook for 1 to 2 minutes per side until pink. Remove the shrimp from the skillet and set aside.
  3. Reduce the heat to medium. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant. Do not let the garlic burn.
  4. Add the uncooked rice, chicken broth, salt, and pepper to the skillet. Stir well to combine.
  5. Bring the mixture to a boil, then immediately cover the skillet tightly with a lid.
  6. Reduce the heat to low and simmer for 15 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
  7. Remove the skillet from the heat. Stir in the butter until melted.
  8. Return the cooked shrimp to the skillet and gently fold them into the rice mixture. Cover and let stand for 2 minutes to reheat the shrimp.
  9. Garnish with fresh parsley before serving directly from the pan.

Notes

  • Use quick-cooking white rice for the best results in this short timeframe. Brown rice requires significantly more liquid and cooking time.
  • If your shrimp are large, you may need to add them back to the rice mixture 1 minute earlier to ensure they are fully cooked through.
