Make a crusty French-style loaf quickly using a simple, no-knead method suitable for weeknight baking.

Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon instant yeast
  • 1 1/2 cups warm water (about 105-115°F)

Instructions

  1. In a large bowl, whisk together the flour, salt, and yeast.
  2. Pour in the warm water and mix with a spoon until a shaggy dough forms. Do not knead.
  3. Cover the bowl tightly with plastic wrap and let the dough rest at room temperature for 30 minutes. This is the quick rise.
  4. Lightly flour a work surface. Gently scrape the dough out and shape it into a rough loaf or oval shape. Do not overwork the dough.
  5. Place the shaped dough onto a baking sheet lined with parchment paper. Cover loosely with a clean kitchen towel and let it rest for another 15 minutes.
  6. Preheat your oven to 450°F (232°C) with a baking stone or heavy baking sheet inside for at least 20 minutes.
  7. Just before baking, use a sharp knife or razor blade to make three shallow diagonal slashes across the top of the loaf.
  8. Carefully slide the parchment paper and loaf onto the preheated stone or baking sheet. Place a shallow pan of hot water on the bottom rack of the oven to create steam.
  9. Bake for 25 to 30 minutes, or until the crust is deep golden brown and the internal temperature reaches 200°F (93°C).
  10. Remove the bread from the oven and cool completely on a wire rack before slicing.

Notes

  • For a crispier crust, spray the inside walls of the oven with water twice during the first 10 minutes of baking.
  • If you do not have instant yeast, use active dry yeast and let it bloom in the warm water for 5 minutes before mixing with the dry ingredients.
  • This recipe skips the long overnight rise typical of traditional no-knead bread, making it much faster.
