Make tender, juicy pulled chicken using your slow cooker. This recipe is easy to prepare and perfect for sandwiches, tacos, or meal prepping.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 cup BBQ sauce (your favorite kind)
  • 1/2 cup chicken broth
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. In a separate bowl, whisk together the BBQ sauce, chicken broth, apple cider vinegar, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Pour the sauce mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is fully cooked and easily shredded.
  5. Remove the chicken from the slow cooker and place it on a cutting board. Shred the chicken using two forks.
  6. Return the shredded chicken to the slow cooker and stir well to coat it evenly with the sauce.
  7. Cook on warm for 15 minutes before serving to allow the flavors to combine.

Notes

  • For extra flavor, add half a chopped onion to the slow cooker before cooking.
  • If the sauce seems too thin after shredding, remove the lid and cook on high for the last 30 minutes to allow some liquid to evaporate.
  • This chicken freezes well for future meal prep. Store cooled chicken in an airtight container for up to 3 months.
