Ingredients
Scale
4 cups chopped ripe peaches (about 2 lbs)
2 cups granulated sugar
1/4 cup lemon juice
1 tablespoon grated lemon zest (optional)
1 teaspoon ground cinnamon (optional)
Instructions
Prepare your canning jars and lids according to the manufacturer’s instructions.
In a large, heavy-bottomed pot, combine the chopped peaches, sugar, lemon juice, and lemon zest (if using).
If using cinnamon, stir it in now.
Place the pot over medium-high heat and bring the mixture to a rolling boil, stirring constantly to dissolve the sugar.
Once boiling, reduce the heat to medium and continue to cook, stirring frequently, until the jam thickens. This can take anywhere from 20 to 40 minutes. You can test for doneness by placing a small amount of jam on a chilled plate; it should wrinkle when you push it with your finger.
Skim off any foam that forms on the surface of the jam.
Carefully ladle the hot jam into the prepared jars, leaving about 1/4 inch of headspace.
Wipe the rims of the jars clean and secure the lids.
Process the jars in a boiling water bath for 10 minutes (adjust time for altitude if necessary).
Remove the jars from the canner and let them cool completely on a wire rack. You should hear the lids pop as they seal.
Once cooled, check that the lids are sealed. Store sealed jars in a cool, dark place. Refrigerate any unsealed jars or jars that will be used soon.
Notes
Ensure peaches are ripe but still firm for the best texture.
Adjust sugar to your sweetness preference, but note that sugar acts as a preservative.
For a smoother jam, you can mash some of the peaches before cooking.
This jam can also be made without canning for immediate consumption or refrigerator storage.
