Ingredients
Scale
2 cups grated zucchini, squeezed dry
1 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
1/4 cup all-purpose flour
1 large egg, lightly beaten
1/4 cup chopped fresh parsley
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
Olive oil spray
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a medium bowl, combine the grated zucchini, Parmesan cheese, panko breadcrumbs, flour, egg, parsley, garlic powder, salt, and pepper. Mix until well combined.
Shape the mixture into small tot shapes, about 1-2 inches long.
Place the tots on the prepared baking sheet.
Lightly spray the tops of the tots with olive oil.
Bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
Serve warm.
Notes
Make sure to squeeze as much moisture as possible from the grated zucchini to ensure crispy tots.
You can add other seasonings like onion powder or a pinch of red pepper flakes for a little heat.
These are great served with your favorite dipping sauce like marinara or ranch.
