Make simple, portion-controlled banana bites dipped in chocolate without using your oven. These are quick to prepare and freeze well.

Ingredients

Scale
  • 3 ripe bananas
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil
  • 1/4 cup creamy peanut butter
  • 1 teaspoon vegetable oil (optional, for thinning)

Instructions

  1. Peel the bananas and slice each into approximately 1-inch thick rounds. You should get about 20 to 24 pieces.
  2. Place the banana slices in a single layer on a baking sheet lined with parchment paper.
  3. Freeze the banana slices for at least 2 hours, or until completely solid.
  4. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is smooth and fully melted.
  5. Stir the teaspoon of vegetable oil into the melted chocolate if the mixture seems too thick for dipping.
  6. Remove the frozen banana slices from the freezer. Working quickly, dip each frozen slice into the melted chocolate, ensuring it is fully coated. Allow excess chocolate to drip off.
  7. Place the dipped bites back onto the parchment-lined baking sheet.
  8. Warm the peanut butter slightly in the microwave (about 10 seconds) so it is easily drizzled.
  9. Drizzle the slightly warmed peanut butter over the chocolate coating on each bite.
  10. Return the tray to the freezer for another 15 minutes to set the chocolate and peanut butter coating completely.
  11. Store the finished bites in an airtight container in the freezer.

Notes

  • Use firm, slightly under-ripe bananas for the best texture when frozen.
  • If you prefer a thinner chocolate coating, add a small amount of shortening or refined coconut oil to the melted chocolate.
  • These bites are best eaten directly from the freezer.
