Make this classic, no-cook Mediterranean salad using fresh cucumbers, tomatoes, feta cheese, and olives with a simple lemon-oregano dressing. It is a light side dish perfect for warm weather.

Ingredients

Scale
  • 2 large cucumbers, chopped
  • 3 ripe tomatoes, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and chop the cucumbers and tomatoes into bite-sized pieces. Place them in a large bowl.
  2. Add the crumbled feta cheese, halved Kalamata olives, and thinly sliced red onion to the bowl with the vegetables.
  3. In a small separate bowl, whisk together the olive oil, fresh lemon juice, dried oregano, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad ingredients.
  5. Gently toss all ingredients together until everything is lightly coated.
  6. Serve immediately or chill for 15 minutes to allow flavors to meld.

Notes

  • Use English or Persian cucumbers for fewer seeds.
  • If you prefer a tangier flavor, you can substitute half of the lemon juice with red wine vinegar.
  • For best flavor, use high-quality Greek oregano.
