This simple, flavorful citrus soy marinade is perfect for enhancing your tuna steaks before searing or grilling. It delivers bright flavor without overpowering the fish.

Ingredients

Scale
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons fresh lime juice
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon brown sugar
  • 1/2 teaspoon black pepper
  • 4 (6 ounce) tuna steaks

Instructions

  1. In a medium bowl, whisk together the soy sauce, lime juice, lemon juice, sesame oil, ginger, garlic, brown sugar, and black pepper until the sugar dissolves. This is your flavorful marinade for fresh tuna.
  2. Place the tuna steaks in a resealable plastic bag or a shallow dish. Pour the marinade over the steaks, ensuring they are fully coated.
  3. Refrigerate the tuna steaks for 20 to 30 minutes. Do not marinate longer than 30 minutes, as the acid in the citrus can begin to ‘cook’ the fish, affecting the texture.
  4. Remove the tuna from the marinade and pat the steaks dry with paper towels before cooking. Discard the remaining marinade.
  5. Sear or grill the tuna steaks according to your preferred method until the outside is browned and the inside reaches your desired doneness.

Notes

  • For a spicier kick, add 1/2 teaspoon of red pepper flakes to the marinade mixture.
  • If you are grilling, lightly oil your grates before placing the marinated tuna steaks down to prevent sticking.
  • Patting the tuna dry before searing is key to achieving a good crust.
