Make this hearty, creamy, and bean-free keto white chicken chili quickly for a satisfying low-carb meal.

Ingredients

Scale
  • 2 cups cooked chicken breast (shredded, rotisserie works well)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups chicken broth
  • 8 ounces cream cheese, cubed
  • 1/2 cup heavy cream
  • 1/2 cup frozen corn (optional, omit for strict keto)
  • Salt and black pepper to taste
  • Garnish: avocado, cilantro, lime wedges

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes.
  2. Add garlic, cumin, oregano, and cayenne pepper. Cook for 1 minute until fragrant.
  3. Pour in the chicken broth and bring the mixture to a simmer.
  4. Stir in the shredded chicken.
  5. Reduce heat to low. Add the cubed cream cheese, stirring constantly until it melts completely and the chili thickens.
  6. Stir in the heavy cream and the frozen corn, if using. Heat through for 2-3 minutes, but do not boil after adding cream.
  7. Season with salt and pepper to your taste.
  8. Serve hot with your preferred garnishes.

Notes

  • For an Instant Pot method, sauté vegetables, then add chicken, broth, and spices. Cook on High Pressure for 5 minutes, then quick release. Stir in cream cheese and heavy cream manually until smooth.
  • To make this recipe Whole30 compliant, omit the corn and substitute the cream cheese with an equal amount of full-fat coconut cream or cashew cream.
  • If you prefer a thicker chili, let it simmer uncovered for an extra 10 minutes before adding the cream.
