A simple, low-carb smoothie recipe that tastes like strawberry cheesecake, perfect for a keto diet.

Ingredients

Scale
  • 1 cup frozen strawberries
  • 4 oz cream cheese, softened
  • 1/2 cup heavy whipping cream
  • 1/2 cup unsweetened almond milk
  • 1/4 cup water (or more for desired consistency)
  • 2 tablespoons erythritol or monk fruit sweetener (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • 4 ice cubes (optional, for extra thickness)

Instructions

  1. Place the softened cream cheese, heavy whipping cream, almond milk, water, sweetener, and vanilla extract into a high-speed blender.
  2. Blend these ingredients until the mixture is smooth and creamy. Scrape down the sides if necessary.
  3. Add the frozen strawberries and ice cubes (if using) to the blender.
  4. Blend again until the mixture is completely smooth and thick. Start on low speed and gradually increase to high.
  5. Taste the smoothie and add more sweetener if you prefer it sweeter. Add a splash more water or almond milk if the mixture is too thick to blend easily.
  6. Pour the smoothie into a glass and serve immediately.

Notes

  • For a thicker, more dessert-like texture, use only 1/4 cup of almond milk and omit the water.
  • You can substitute frozen raspberries for half of the strawberries for a different berry flavor.
  • Add one scoop of unflavored or vanilla keto protein powder for a meal replacement option.
  • If you do not have erythritol, use liquid stevia drops until you reach your desired sweetness level.
