This low carb meatloaf recipe delivers the comfort of a classic dinner without the carbs. We use almond flour for binding, making this gluten free meatloaf incredibly moist. It is a perfect easy keto dinner idea that slices well for meal prep and pleases the whole family.

Ingredients

Scale
  • 2 lbs ground beef (80/20 recommended)
  • 1/2 cup almond flour
  • 1 large egg
  • 1/4 cup heavy cream
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce (check label for low sugar/carb)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/4 cup ketchup (sugar-free or keto-friendly)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon erythritol or preferred keto sweetener

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line a baking sheet with parchment paper for a free-form loaf.
  2. In a large bowl, combine the ground beef, almond flour, egg, heavy cream, chopped onion, minced garlic, Worcestershire sauce, salt, pepper, and thyme. Mix gently with your hands until just combined. Do not overmix.
  3. Shape the mixture into a loaf shape on your prepared pan or press it into the loaf pan.
  4. In a small bowl, whisk together the sugar-free ketchup, apple cider vinegar, and keto sweetener to create the glaze.
  5. Brush half of the glaze mixture evenly over the top of the meatloaf.
  6. Bake for 45 minutes.
  7. Remove the meatloaf from the oven and brush the remaining glaze over the top.
  8. Return to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 160°F (71°C).
  9. Let the keto meatloaf rest for 10 minutes before slicing and serving.

Notes

  • For an even juicier result, you can substitute the heavy cream with 1/4 cup of beef broth.
  • If you do not have almond flour, you can use crushed pork rinds as a binder for a slightly different texture.
  • This recipe is excellent for family friendly keto recipes because the glaze hides the low carb ingredients well.
