Ingredients
Scale
1 (12 ounce) can frozen, concentrated pineapple juice, thawed
1 (15 ounce) can cream of coconut
1 cup white rum (optional, for alcoholic version)
1 cup pineapple juice, chilled
2 cups frozen strawberries
1 cup water or club soda (for thinning, if needed)
Ice cubes
Fresh strawberries and pineapple wedges for garnish
Instructions
Combine the thawed pineapple juice concentrate, cream of coconut, rum (if using), chilled pineapple juice, and frozen strawberries in a large blender.
Blend the mixture until it is completely smooth and slushy. Work in batches if your blender is small.
Pour the blended mixture into a large punch bowl.
If the punch is too thick, stir in the water or club soda until you reach your desired consistency.
Keep the punch cold by placing the punch bowl over a larger bowl filled with ice.
Garnish the punch bowl with fresh strawberry slices and pineapple wedges before serving.
Serve immediately in glasses filled with ice.
Notes
For a non-alcoholic version, simply omit the white rum and use extra pineapple juice or water.
You can prepare the base mixture up to 24 hours ahead of time and store it in the refrigerator. Add the frozen strawberries and blend just before serving.
If you prefer a thinner punch consistency from the start, use fresh strawberries instead of frozen and add 1 cup of ice during blending.
