Follow these steps to create a refreshing, layered Iced Strawberry Matcha Latte using a simple homemade strawberry puree.

Ingredients

Scale
  • 1 cup fresh or frozen strawberries
  • 2 tablespoons granulated sugar (adjust to taste)
  • 1 tablespoon water
  • 1 teaspoon matcha powder (ceremonial or culinary grade)
  • 2 tablespoons hot (not boiling) water
  • 1 cup milk of choice (dairy, almond, or oat)
  • Ice cubes

Instructions

  1. Prepare the strawberry puree: Combine strawberries, sugar, and 1 tablespoon of water in a small saucepan. Heat over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens slightly, about 5 to 7 minutes. Mash any remaining large pieces. Remove from heat and let cool completely.
  2. Prepare the matcha: Sift the matcha powder into a small bowl. Add 2 tablespoons of hot water. Whisk vigorously in a ‘W’ or ‘M’ motion until the matcha is smooth and frothy, with no clumps.
  3. Assemble the drink: Place ice cubes into a tall glass.
  4. Add the strawberry layer: Spoon 2 to 3 tablespoons of the cooled strawberry puree over the ice.
  5. Add the milk layer: Gently pour the milk over the puree and ice.
  6. Add the matcha layer: Slowly pour the prepared matcha mixture over the milk. Pouring slowly over the back of a spoon helps maintain the layers.
  7. Serve immediately. Stir before drinking to combine flavors.

Notes

  • For a thinner syrup, add more water to the strawberry mixture while cooking.
  • Oat milk provides a creamy texture that complements the matcha well.
  • If you prefer a sweeter drink, add a small amount of sweetener directly to the matcha before whisking.
