Prepare this fast, flavorful honey soy chicken served over rice for a simple weeknight dinner bowl.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup cooked white rice
  • 2 cups broccoli florets
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 1 green onion, sliced, for garnish

Instructions

  1. Mix soy sauce, honey, rice vinegar, ginger, and garlic in a small bowl to make the sauce. Set aside half of the sauce for later.
  2. Toss the chicken pieces with the remaining half of the sauce in a separate bowl and let it marinate for 5 minutes while you heat the pan.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  4. Add broccoli florets to the same skillet. Cook for 3-4 minutes until bright green and slightly tender.
  5. In a small cup, whisk together cornstarch and water to create a slurry.
  6. Return the cooked chicken to the skillet with the broccoli. Pour the reserved half of the honey soy sauce mixture over the chicken and vegetables.
  7. Stir in the cornstarch slurry. Cook for 1-2 minutes, stirring constantly, until the sauce thickens into a glaze.
  8. Assemble your bowls: Divide the cooked rice among serving bowls. Top with the glazed chicken and broccoli mixture. Garnish with sliced green onion.

Notes

  • You can substitute brown rice or quinoa for white rice.
  • For extra flavor, add a pinch of red pepper flakes to the sauce mixture.
  • This recipe works well using pre-cut stir-fry vegetables if you need to save more time.
