Ingredients
Scale
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
2 cups broccoli florets
1/2 cup low-sodium soy sauce
1/4 cup honey
3 cloves garlic, minced
1 tbsp rice vinegar
1 tsp grated fresh ginger
1/4 tsp red pepper flakes (optional)
2 cups instant white rice
1 tbsp sesame seeds, for garnish
Instructions
Cook the instant rice according to package directions. Keep warm.
In a small bowl, whisk together the soy sauce, honey, minced garlic, rice vinegar, ginger, and red pepper flakes to make the sauce. Set aside.
Heat the olive oil in a large skillet or wok over medium-high heat.
Add the shrimp to the skillet in a single layer. Cook for 1 to 2 minutes per side until pink. Remove the shrimp from the skillet and set aside.
Add the broccoli florets to the same skillet. Stir fry for 3 to 4 minutes until tender-crisp.
Return the cooked shrimp to the skillet with the broccoli.
Pour the prepared honey garlic sauce over the shrimp and broccoli. Cook, stirring constantly, for 1 to 2 minutes until the sauce thickens and coats everything evenly. Do not overcook the shrimp.
Divide the cooked rice into two bowls. Top the rice with the honey garlic shrimp and broccoli mixture.
Garnish with sesame seeds before serving.
Notes
For extra flavor, use minute brown rice instead of white rice.
If you prefer a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the sauce during the last minute of cooking.
You can substitute broccoli with snap peas or sliced bell peppers.
