Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch bites
1 tablespoon olive oil
1/2 cup honey
1/4 cup soy sauce (low sodium)
3 cloves garlic, minced
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
1/4 teaspoon black pepper
2 cups cooked jasmine rice
1 head broccoli, cut into florets
1 teaspoon sesame oil
1 tablespoon sesame seeds, for garnish
Instructions
Season the chicken bites lightly with pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6 to 8 minutes. Remove chicken from the skillet and set aside.
While the chicken cooks, prepare the sauce: In a small bowl, whisk together the honey, soy sauce, minced garlic, rice vinegar, and ginger.
Return the skillet to medium heat. Pour the sauce mixture into the skillet. Bring to a simmer and cook for 2 to 3 minutes, stirring constantly, until the sauce thickens slightly and becomes glossy.
Return the cooked chicken bites to the skillet. Toss gently to coat all pieces evenly in the sticky honey garlic sauce.
Steam the broccoli florets until tender-crisp, about 4 minutes. Toss the hot broccoli with sesame oil.
To assemble the bowls, divide the cooked rice among serving bowls. Top the rice with the honey garlic chicken bites. Arrange the steamed broccoli alongside the chicken.
Sprinkle the sesame seeds over the top of the chicken and broccoli before serving.
Notes
For crispier bites, you can lightly dust the chicken pieces in cornstarch before pan-frying.
If you prefer an air fryer method, cook the seasoned chicken bites at 400°F (200°C) for 12 to 15 minutes, tossing halfway, then coat them in the prepared sauce.
Substitute brown rice for jasmine rice if desired.
