You can make this rich, sweet, and savory homemade teriyaki sauce from scratch in under 10 minutes using simple pantry staples. It is the perfect glaze, marinade, or dipping sauce for chicken, beef, salmon, or vegetables.

Ingredients

Scale
  • 1/2 cup low sodium soy sauce
  • 1/4 cup water
  • 1/4 cup packed brown sugar
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)

Instructions

  1. Combine the soy sauce, water, brown sugar, honey (or maple syrup), rice vinegar, grated ginger, minced garlic, and sesame oil in a small saucepan.
  2. Place the saucepan over medium heat. Stir the mixture constantly until the sugar dissolves and the sauce begins to simmer.
  3. Once simmering, slowly whisk in the cornstarch slurry. Continue to whisk as the sauce thickens, which should take about 1 to 2 minutes.
  4. Remove the sauce from the heat immediately once it coats the back of a spoon thickly. This is your homemade teriyaki sauce.
  5. Let the sauce cool slightly before using it as a glaze, marinade, or dipping sauce.

Notes

  • For a thicker sauce, use slightly less water or increase the cornstarch slightly.
  • This sauce works well as a marinade for chicken, steak, or tofu for at least 30 minutes before cooking.
  • Use this as a simple stir fry sauce by adding it in the last minute of cooking your vegetables and protein.
  • If you prefer a less sweet flavor, reduce the brown sugar by one tablespoon.
