A simple, make-ahead breakfast recipe packed with protein using peanut butter for flavor and texture.

Ingredients

Scale
  • 1/2 cup rolled oats
  • 1 scoop vanilla or unflavored whey/casein protein powder
  • 1 tablespoon chia seeds
  • 1 tablespoon natural peanut butter
  • 1 tablespoon maple syrup or honey (optional)
  • 1/4 teaspoon salt
  • 3/4 cup milk (dairy or non-dairy)
  • 1/4 cup plain Greek yogurt (optional, for extra protein/thickness)

Instructions

  1. Combine the rolled oats, protein powder, chia seeds, salt, and sweetener (if using) in a jar or container with a lid.
  2. Add the milk and Greek yogurt (if using) to the dry ingredients.
  3. Stir well until all ingredients are mixed and the protein powder is mostly dissolved.
  4. Spoon the peanut butter on top or stir it in completely.
  5. Seal the container and refrigerate for at least 6 hours, or preferably overnight.
  6. In the morning, check the consistency. If it is too thick, add a splash more milk. If it is too thin, you can stir in a few more chia seeds and let it sit for 10 minutes.
  7. Eat cold directly from the jar.

Notes

  • For a thicker texture, use less milk or add an extra teaspoon of chia seeds.
  • You can store these oats in the refrigerator for up to 4 days for meal prepping.
  • To make this dairy-free, use a plant-based milk and a plant-based protein powder, omitting the Greek yogurt.
  • Add 1 tablespoon of cocoa powder for a chocolate peanut butter variation.
