Make substantial, savory breakfast rolls filled with cooked sausage, scrambled egg, and cheese, wrapped in refrigerated dough for an easy bake.

Ingredients

Scale
  • 1 (8 count) can refrigerated crescent roll dough
  • 1 pound bulk breakfast sausage
  • 6 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the breakfast sausage in a skillet over medium heat, breaking it up as it cooks. Drain off any excess grease and set the sausage aside.
  3. In a bowl, whisk together the eggs, milk, and black pepper until well combined. Pour the egg mixture into the same skillet used for the sausage (no need to clean it). Cook over medium-low heat, stirring gently until the eggs are set but still slightly moist. Do not overcook.
  4. In a large bowl, combine the cooked sausage, scrambled eggs, and shredded cheese. Mix gently.
  5. Unroll the crescent roll dough. Separate the dough into 8 triangles.
  6. Place about 1/8 of the sausage and egg mixture onto the wide end of each dough triangle.
  7. Roll each triangle up tightly, starting from the wide end and rolling toward the point. Place the rolls seam-side down in the prepared baking dish.
  8. Bake for 15 to 18 minutes, or until the rolls are golden brown and cooked through.
  9. Let the rolls cool for 5 minutes before serving.

Notes

  • You can substitute pre-cooked sausage links by chopping them finely before mixing them with the eggs.
  • For make-ahead preparation, assemble the rolls, cover the dish, and refrigerate for up to 12 hours before baking. Add 3-5 minutes to the baking time if baking directly from the refrigerator.
  • To freeze, cool the baked rolls completely, wrap individually in plastic wrap, and then place them in a freezer bag. Reheat from frozen at 350 degrees Fahrenheit for about 20 minutes.
