This recipe provides a simple, one-dish meal using ground beef, rice, and a creamy, cheesy sauce, perfect for a weeknight dinner.

Ingredients

Scale
  • 1 pound ground beef
  • 1 cup uncooked long-grain white rice
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup water
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef in a large skillet over medium heat. Drain off any excess fat.
  3. In a large bowl, combine the browned ground beef, uncooked rice, cream of mushroom soup, cream of chicken soup, water, onion powder, garlic powder, salt, and pepper. Mix these ingredients well.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Cover the baking dish tightly with aluminum foil.
  6. Bake for 45 minutes.
  7. Remove the foil and sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  8. Return the dish to the oven, uncovered, and bake for an additional 10 to 15 minutes, or until the cheese is melted and bubbly and the rice is tender.
  9. Let the casserole stand for 5 minutes before serving.

Notes

  • You can substitute cream of celery soup for one of the cream soups if you prefer a different flavor base.
  • For a make-ahead option, assemble the casserole completely (without the cheese) and cover it. Refrigerate for up to 24 hours, then add 10 minutes to the initial covered baking time.
  • Use cooked rice instead of uncooked rice to significantly reduce the baking time to about 20 minutes total.
