Ingredients
Scale
1 cup unsalted butter, softened
1 (8 ounce) package cream cheese, softened
2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup powdered sugar, for rolling
Instructions
In a large bowl, beat the softened butter and cream cheese together until smooth.
Add the granulated sugar and beat until the mixture is light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
Cover the dough and chill in the refrigerator for at least 2 hours, or until firm enough to handle.
Preheat your oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
Place the powdered sugar in a shallow dish.
Scoop the chilled dough into balls, about 1.5 tablespoons each. Roll each ball completely in the powdered sugar.
Place the coated dough balls 2 inches apart on the prepared baking sheets.
Bake for 10 to 12 minutes. The edges should look set, but the centers will still look soft and slightly underbaked.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. The centers will set as they cool, creating the gooey texture.
Notes
For the best gooey center, do not overbake the cookies. They should look slightly pale in the middle when you remove them from the oven.
If you prefer a stronger lemon flavor, add 1 teaspoon of lemon zest to the dough mixture.
Chill the dough for longer, up to 24 hours, for easier scooping and a richer flavor.
