Spicy-sweet chocolate truffles with a kick of ghost pepper. These treats offer a unique flavor combination for those who enjoy a bit of heat.

Ingredients

Scale
  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate, finely chopped
  • 2 tablespoons unsalted butter, softened
  • 1/4 teaspoon ghost pepper powder (or to taste)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup cocoa powder, for dusting

Instructions

  1. Heat the heavy cream in a saucepan over medium heat until it just begins to simmer. Do not boil.
  2. Pour the hot cream over the chopped chocolate in a heatproof bowl. Let it sit for 5 minutes without stirring.
  3. Gently whisk the chocolate and cream mixture until smooth and fully combined.
  4. Whisk in the softened butter, ghost pepper powder, vanilla extract, and salt until smooth.
  5. Cover the bowl with plastic wrap, pressing it directly onto the surface of the chocolate mixture to prevent a skin from forming.
  6. Refrigerate for at least 2 hours, or until firm enough to scoop.
  7. Once firm, scoop the chocolate mixture into small balls using a melon baller or a small spoon.
  8. Roll the balls in cocoa powder until evenly coated.
  9. Store the truffles in an airtight container in the refrigerator.

Notes

  • Start with a small amount of ghost pepper powder and add more if you prefer a spicier truffle.
  • Ensure the chocolate is finely chopped for even melting.
  • Allow the truffle mixture to chill sufficiently before scooping for easier handling.
