Ingredients

Scale
  • 1 whole chicken (about 3-4 lbs)
  • 2 lbs mixed root vegetables (carrots, potatoes, parsnips), chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon dried herbs (rosemary, thyme, sage)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken dry with paper towels.
  3. In a small bowl, mix minced garlic, olive oil, dried herbs, salt, and pepper.
  4. Rub the herb mixture all over the chicken, inside and out.
  5. Place the chopped root vegetables in a large roasting pan.
  6. Toss the vegetables with a little olive oil, salt, and pepper.
  7. Place the seasoned chicken on top of the vegetables in the roasting pan.
  8. Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the chicken is cooked through and the vegetables are tender. The internal temperature of the chicken should reach 165°F (74°C).
  9. Let the chicken rest for 10 minutes before carving.
  10. Serve the chicken with the roasted vegetables.

Notes

  • You can add other vegetables like onions, sweet potatoes, or Brussels sprouts.
  • For crispier skin, you can rub a little butter under the chicken skin before applying the herb mixture.
  • Ensure vegetables are cut into uniform sizes for even cooking.
