Ingredients
Scale
1.5 lb sirloin steak, cut into 1-inch cubes
1 lb small Yukon Gold potatoes, quartered
4 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 teaspoon dried thyme
1/2 teaspoon salt, plus more for seasoning
1/4 teaspoon black pepper, plus more for seasoning
2 tablespoons olive oil
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Toss the quartered potatoes with 1 tablespoon of olive oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper on the prepared baking sheet. Spread them into a single layer.
Roast the potatoes for 20 minutes while you prepare the steak.
Pat the steak cubes dry with paper towels. Season them generously with the remaining salt and pepper.
In a large cast-iron skillet or oven-safe pan, heat the remaining 1 tablespoon of olive oil over medium-high heat.
Sear the steak cubes in batches, ensuring not to overcrowd the pan, until browned on all sides, about 2-3 minutes per batch. Remove the steak and set aside.
Reduce the heat to medium. Add the butter to the skillet. Once melted, add the minced garlic, rosemary, and thyme. Cook for 1 minute until the garlic is fragrant. Do not let the garlic burn.
Return the partially cooked steak bites to the skillet. Toss them in the garlic butter mixture.
Remove the potatoes from the oven. They should be starting to brown.
Transfer the skillet with the steak bites to the preheated oven alongside the potatoes.
Continue roasting both the steak and potatoes for another 5-8 minutes, or until the steak reaches your desired doneness (medium-rare is recommended for tenderness) and the potatoes are golden brown and crispy.
Remove from the oven. Toss the steak bites with any remaining garlic butter in the pan. Garnish with fresh parsley before serving immediately with the crispy potatoes.
Notes
For extra crispy potatoes, toss them with 1 teaspoon of cornstarch before adding the olive oil and salt.
Use high-quality steak, like sirloin or filet mignon, for the best texture.
You can finish the steak bites with a squeeze of fresh lemon juice for brightness, if desired.
