Ingredients
Scale
1 lb large shrimp, peeled and deveined
4 tbsp unsalted butter
4 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
2 cups cooked white rice
1 cup broccoli florets, steamed
1/2 cup shredded carrots
2 tbsp fresh parsley, chopped (for garnish)
For the Garlic Sauce:
1/2 cup mayonnaise
2 tbsp lemon juice
2 cloves garlic, minced
1 tsp Dijon mustard
1 tbsp water (or more, for thinning)
1/4 tsp salt
Instructions
Prepare the Garlic Sauce: In a small bowl, whisk together the mayonnaise, lemon juice, minced garlic, Dijon mustard, and salt. Add water one teaspoon at a time until you reach your desired sauce consistency. Set aside.
Cook the Shrimp: Melt the butter in a large skillet over medium heat. Add the 4 cloves of minced garlic and cook for 30 seconds until fragrant, do not let it brown.
Add the shrimp to the skillet. Season with salt and pepper. Cook for 2-3 minutes per side until pink and cooked through. Remove the shrimp from the skillet and set aside, leaving the garlic butter in the pan.
Assemble the Bowls: Divide the cooked rice evenly between two bowls. Arrange the steamed broccoli and shredded carrots around the rice.
Place the garlic butter shrimp on top of the rice in each bowl.
Drizzle a generous amount of the prepared Garlic Sauce over the shrimp and rice.
Garnish the bowls with chopped fresh parsley before serving.
Notes
For a richer flavor, use brown butter for cooking the shrimp, but watch carefully to prevent burning the garlic solids.
To balance the savory garlic butter, add a small squeeze of fresh lemon juice to the shrimp right after they finish cooking.
If you prefer a thinner sauce, increase the water content slightly, but keep the sauce thick enough to coat the ingredients.
