A rich and savory baked rice casserole that captures the deep flavor of French onion soup using slow-caramelized onions, butter, and beef broth for a comforting side dish.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 2 large yellow onions, thinly sliced
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 1/2 cups long-grain white rice, uncooked
  • 3 cups beef broth (or vegetable broth for vegetarian option)
  • 1/2 cup heavy cream
  • 1/2 cup shredded Gruyère cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Melt the butter in a large, oven-safe skillet or Dutch oven over medium-low heat. Add the sliced onions, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Cook slowly, stirring occasionally, for 25 to 35 minutes until the onions are deeply caramelized and soft.
  3. Stir the uncooked rice into the caramelized onions until coated.
  4. Pour in the beef broth and bring the mixture to a simmer. Remove the skillet from the heat.
  5. Stir in the heavy cream, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper.
  6. Transfer the rice mixture to the prepared baking dish if you did not use an oven-safe skillet. Sprinkle the Gruyère and Parmesan cheeses evenly over the top.
  7. Bake uncovered for 30 to 35 minutes, or until the liquid is absorbed and the rice is tender and the topping is golden brown and bubbly.
  8. Let the casserole rest for 5 minutes before serving. Fluff gently with a fork.

Notes

  • For deeper flavor, cook the onions until they are dark brown, but do not let them burn.
  • If you prefer a stovetop method, cook the rice according to package directions using the broth, then stir in the caramelized onions, cream, and cheeses off the heat until melted.
  • This dish reheats well; add a splash of broth or water when reheating to restore moisture.
