Ingredients

Scale
  • 12 large eggs
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 pound breakfast sausage
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 1 cup shredded cheddar cheese
  • 12 whole wheat tortillas
  • Optional toppings: salsa, sour cream, avocado

Instructions

  1. In a large bowl, whisk together eggs, milk, salt, and pepper.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add sausage and cook until browned, breaking it up with a spoon.
  4. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  5. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are set.
  6. Stir in the shredded cheese until melted.
  7. Warm the tortillas slightly to make them pliable.
  8. Spoon about 1/2 cup of the egg mixture onto the center of each tortilla.
  9. Fold in the sides of the tortilla, then roll it up tightly from the bottom.
  10. Wrap each burrito individually in plastic wrap, then in aluminum foil.
  11. Place the wrapped burritos in a freezer-safe bag or container.
  12. To reheat, remove foil and plastic wrap, then microwave for 1-2 minutes, or until heated through.

Notes

  • For a spicier burrito, add a pinch of cayenne pepper to the egg mixture.
  • You can substitute the sausage with bacon or plant-based sausage.
  • Feel free to add other vegetables like mushrooms or spinach.
  • Ensure burritos are completely cooled before wrapping and freezing for best quality.
