Make your own small-batch elderberry syrup sweetened with honey. This recipe works well for canning or refrigeration for easy immune support throughout the season.

Ingredients

Scale
  • 1 cup dried elderberries (or 2 cups fresh elderberries)
  • 3 cups water
  • 1/2 cup raw honey
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves

Instructions

  1. Combine the elderberries, water, ginger, cinnamon, and cloves in a saucepan.
  2. Bring the mixture to a boil, then reduce heat and simmer, uncovered, for 30 to 45 minutes, until the liquid has reduced by about half.
  3. Remove the pan from the heat and let the mixture cool slightly, about 15 minutes.
  4. Strain the liquid through a fine-mesh sieve or cheesecloth into a clean bowl, pressing gently on the solids to extract all the liquid. Discard the solids.
  5. Once the strained liquid is warm (not hot), stir in the raw honey until it is fully dissolved. Do not boil the honey, as this can reduce its beneficial properties.
  6. Pour the finished elderberry syrup into clean, sterilized jars or bottles.
  7. For refrigeration, seal the jars and store in the refrigerator for up to 3 weeks.
  8. For canning, process the sealed jars in a water bath canner for 10 minutes (adjust time for altitude). Allow jars to cool and check seals. Canned syrup lasts for up to one year in a cool, dark place.

Notes

  • If using fresh berries, use twice the amount of dried berries listed.
  • For a kid-friendly flavor, you can slightly increase the cinnamon or add a small slice of fresh orange during the simmering process.
  • Dosage suggestion: Adults take 1 tablespoon daily for maintenance, or 1 tablespoon every 3-4 hours when feeling run down. For children over age one, use 1 teaspoon daily or as needed.
  • This recipe is great for making a quick batch using an Instant Pot; use a 1:3 ratio of berries to water and cook on high pressure for 10 minutes, followed by a natural pressure release.
